Another adventure!

What’s in the box?!

As most of you know, I’m a full-time Speech-Language Pathologist in a school system. I love my job and I also love the flexibility that my career field offers. I can work in school systems, private practice, nursing homes, hospitals, NICU, etc.. It’s the perfect career for a military spouse since we have to pick up and move every couple of years. I love all of the experiences that I’ve been afforded. During this season of our life, the school system has been perfect considering the ages of our children. I’ve been able to take them to school with me and share in those experiences, as well as, be on the same schedule as them through two deployments. As we look ahead to another move, we’ll have to decide what’s best for the next stage. Only time will tell! LOL!

I also began a venture into health coaching a couple of years ago. I was working on my own health/fitness and figured out that the best accountability was to help others as well. It’s been so rewarding and the benefits have carried over to all aspects of my life…parenting, marriage, vision for the future, goal setting, embracing the positives and striving to live each day to the fullest. Being a part of an amazing team has pushed me to step outside of my comfort zone and strive to become a better wife and mother.

I used to work in a hospital in the NICU and outpatient pediatrics. Many people aren’t aware that a part of Speech Pathologist’s scope of practice is feeding/swallowing. I loved that environment. I was constantly challenged and constantly learning in the medical environment. Since having my own children and dealing with bottles, pacifiers, sippy cups, spoon feeding, picky eating, etc., I’ve been wanting to get back into the area of pediatric feeding. I plan to pursue this when we find out our next location.

About a year ago after my experience with coaching and improving my own nutrition, I found myself wanting to learn more. I love being an accountability partner, but I wanted to have more knowledge in the area to serve others the best that I can. I am a firm believer that good nutrition can be the starting point to improving any aspect of life. I also believe that teaching our children good eating habits is crucial. The obesity rate is astronomical in our country. There are so many busy families out there and often quick/convenient food takes priority over nutritious. I want to help families come up with plans to incorporate healthier habits.

I’ve decided to take courses to become certified as a Nutrition and Wellness Consultant and Youth Nutrition Specialist. It’s been something that was weighing on my mind for awhile and I decided that this was the right time to go for it. I feel that the knowledge will help me both in the area of pediatric feeding and coaching. I’m looking forward to the challenge and I look forward to helping others lead healthier lives!

Chocolate!!

You know those days when you want to just devour a King Size Snickers?!  Maybe a never-ending handful of M&Ms?!

Today was THAT day for me!  Thank goodness I try not to keep those temptations in our house because they would be long gone!

I decided to make these beauties instead!  They are a perfect little snack anytime, but especially when those sweets cravings are hitting hard!

Sweet tooth= satisfied

I’m on day 3 of the 21 Day Fix Extreme and I have to admit that it’s the hardest.  My body is still wanting some of the sugars that it’s been missing.  There are times when I just want to devour every salty and sweet snack in sight!

Well, I didn’t start this program just to quit!  I decided to take the healthier route and make a dessert that would not only solve my sweet tooth issue, but also provide some superfood goodness!  Easy and DELICIOUS!

Chocolate Shakeology Pie

Mix together the following ingredients:

1 1/2 cups of plain Greek Yogurt

1 scoops of Chocolate Shakeology

1/2 cup of all-natural peanut butter (I actually mixed up some PB2 ahead to get the amount I needed)

1/2 cup unsweetened almond milk

1 whole wheat graham pie crust

Refrigerate for at least an hour or until firm.  Makes 8 servings.

Bananas getting ripe? Freeze them!
I love having bananas in my smoothie (especially with Chocolate Shakeology and PB2)! These frozen bananas are perfect for the smoothies and even for banana ice cream!

Food Prep overload

Ahhhh feeling like I have food prep ADD right now. I have a million things going at once but I know that it will pay off throughout the work week! Here’s what going:
– Body Beast Easy Chicken Fajitas marinading in my refrigerator overnight
– Veggies cut for the week
– Grandma’s Tomato Sauce (FIXATE) cooling off to freeze in gallon sized bags
– Oven Fried Chicken (FIXATE) cooking in the oven
– Cooking ground turkey to freeze for later
– Prepping ham and cheese sandwiches for Brayden’s lunches this week

WHAT YOU NEED:

3 ripe medium bananas, cut into chunks
3 Tablespoons all-natural peanut butter
Unsweetened almond milk (optional)
4 teaspoons chopped dark chocolate
4 teaspoons sliced raw almonds

WHAT YOU DO:

1. Place bananas in plastic bag; freeze for 4 hours, or until completely frozen.
2. Place bananas and peanut butter in blender (or food processor); cover. Blend until smooth. Add 1 to 2 Tbsp. almond milk, if needed, for creamier texture.
3. Divide ice cream evenly between four serving bowls; top evenly with chocolate and almonds.
4. Serve immediately.

21 Day Fix Extreme results

21 Day Fix results

The 21 Day Fix Extreme….I didn’t think that it would work. I knew that it would keep me eating healthy, but I thought that it would be temporary. I thought that Shakeology was too expensive and that it wouldn’t be worth it. Boy, am I glad that I said “yes!”.

The program, the group support and accountability through coaching is what helped me achieve results that I was proud of for the first time! I stuck with it and it sparked a “lifestyle change” rather than some quick fix.

In 21 days, I transformed the way that I meal plan.  I lost 10 lbs and 13 inches off of my body.  Most importantly, I stuck with this for more than 21 days, I have more confidence, more energy and the desire to continue this path to a healthier me!

3 Day Refresh Results

I completed the 3 Day Refresh! It was definitely difficult at times, especially when I had to prepare meals for the rest of the family. Thankfully this was a plan that didn’t involve starving myself or drinking crazy things. I got pretty hungry around the time that I was supposed to eat, but the meals satisfied me until the next one rolled around. The most difficult part was cutting out that morning coffee! I know now that I’m a fan of green tea!😂
On wakeup of day 4, I’m down 1 inch on my belly and 1 inch in my hips. More than anything, it’s a sense of accomplishment and no scale victories. I set a goal and was able to complete. The battery on our scale is broken (which I consider a good thing) so I didn’t track my weight. I was glad that I did this over the weekend because I had a lot of things to keep me busy and distracted.
Day 1= hungry, tired, bloated
Day 2= A little tired but not as hungry. Stayed very active throughout the day for a distraction.
By day 3, I felt that I had more energy and I didn’t feel “blah” and bloated anymore after all of that Spring Break splurging!
I’m glad that I did this! Now onto Hammer and Chisel!
